Healthy Mitsi Snacks

We've jumped back into the kitchen with Stay Strong Mummy as she whips up some healthy Mitsi Snacks, perfect for your next road trip. 

Super Green Smoothie

Serves 2

Combine: 
1 x large banana 
1 x handful fresh spinach
5 fresh mint leaves
1 x serve natural protein (optional)
2 x cups cold coconut water
Handful ice 

Choc Chia Crackles

Makes 14

Ingredients:
3 x tbs coconut oil
3 x tbs cacoa powder
1/4 x cup honey
3 x tbs natural peanut butter
4 x cups puffed rice
1 x tbs Chia seeds

Method:
Melt first three ingredients on stove top over medium heat, stirring until well combined. Pour over puffed rice & Chia seeds and combine. Work quickly so the ingredients don't dry up.
Pour into patty pans and set in the fridge.
Store in an airtight container in the fridge.

Cranberry Coconut Muesli Bars

Makes 14

Ingredients: 
2 x cups puffed rice
1/2 x cup quick oats
2 x two cinnamon 
1 x cup roasted cashews (roughly chopped)
1/2 x cup cranberries
1/2 x cup sultanas
1/4 x cup shredded coconut
1/2 x cup honey
3 x tbs coconut oil
2 x tbs natural peanut butter

Method:
Melt wet ingredients over medium heat. Stir until melted and combined. Set aside.
Stir dry ingredients together. Pour over wet ingredients and combine well.
Layer a deep tray with baking paper. Place the mixture on the tray, pressing down firmly. Allow to set in freezer for 60 mins.
Remove and slice in bars.
Store in an airtight container in the fridge.
